Sante Spa Cuisine is known for its globally-inspired vegetarian and vegan cuisine, with a presence in Pune (2 outlets), Chennai, Bangalore, Ahmedabad and Mumbai BKC. This new venture at the award winning heritage building The Royal Opera House marks a significant milestone for the brand.

Founded by Sonal Barmecha, and co-owned by AgneloRajesh Athaide, a renowned author, social entrepreneur and business mentor, Sante Spa has become known for healthy food options . Chef Shailendra Kekade has curated a menu that draws inspiration from global cuisines and showcases the finest locally sourced, organic ingredients. The introduction of millets and ancient cooking techniques like grilling and roasting offer guests a taste of the future of healthy eating.

The new Sante Spa Cuisine at the Royal Opera House is a captivating space where modern architecture meets earthy elegance. Designed by renowned interior designer Prachi Joshi of DesignWorx, the restaurant seamlessly blends sleek lines with natural elements, creating an inviting atmosphere that is both sophisticated and comforting. The al fresco dining area, adorned with lush greenery and a serene Buddha statue, offers a tranquil escape from the city’s hustle and bustle.

 

Highlights of the menu include the refreshing Organic Cocoash Nectar, a revitalizing blend of tender ash gourd and coconut water, perfect for starting the day. For a taste of global fusion, try the Creole Quinoa, a vibrant combination of charred pineapple carpaccio, Danish feta, quinoa, and a medley of fresh herbs. Plant-based protein lovers will delight in the Buddha Thai, a raw and energizing dish packed with greens, zucchini, cucumber, spinach, avocado, peas, sprouts, and seeds, all tossed in a zesty Sriracha dressing. Those seeking a savoury indulgence can savour the Balinese Tempeh “Satay”, featuring chargrilled tempeh complemented by a rich, homemade peanut and chilli dip. To experience the earthy flavours of India, try the Arbi Tuk Tuk, a comforting Sindhi dish featuring roasted colocasia bulbs infused with aromatic Asian spices. Dive into the Zucchini Zoodles in Hemp Pesto, the aromatic Green Thai curry with steamed, unpolished brown rice, or sip on the antioxidant-rich Cherry Berry Smoothie. Share the freshly prepared Holy Guacamole with homemade chips, then dive into unique creations like wood-fired Pizzas with a Ragi, Almond Flour & sourdough bases and a symphony of toppings.
