Rajasthan Day is celebrated on March 30 to commemorate the merger of four big princely states, Jodhpur, Jaipur, Bikaner, and Jaisalmer, to form the state of Rajasthan. Gujraj Foundation celebrated the day with a five day festival. The foundation collaborated with IFEA and SNS to organise a series of cooking competitions and workshops.
On 1st April 2024, IFEA and SNS celebrated Shitala Satam, when ‘sheetal’ (cold, calming) food is part of the fasting ritual with competitions at workshop. On this day, only food made the previous day is had without reheating.
In order to encourage healthy eating while fasting on Shitala Satam, a cold salad competition and workshop was organised with the support of Mali Greens. Micro-greens grower and urban farmer Aditi Mali, winner of the Young Development Agriculturalist 2021 (overseas based) Award by The Tropical Agricultural Association (TAA), UK, and naturopathy doctor Apeksha conducted the demonstration of Mediterranean Salads this was accompanied by a competition with women preparing salads within a stipulated period.
In a competition sponsored by Monita Techno Food, the participants were asked to prepare a chaat at home and bring it to the menu. They had to fill the chaat in a canapé or chaat basket provided by Monita before presenting to the judges.
The Gola Competition was sponsored by Taj Sharbat. The participants were given crushed ice to use for making a cold dessert. Taj Sharbat provided a range of differently flavoured sharbats to choose from. The participants had to plate up in the stipulated times.
The competitions were judged by Chef Nirmal Kumar, Executive Chef, GIFT City Club (Radisson Individual).
