Memorable Meals

1. Your favourite cuisine?

My favourite cuisine is Regional Indian Food. India has such a diverse culture that’s it’s very difficult for me to pin point any one cuisine. I love the Gujarati and Khathiwadi food , their farsans and sweets. There is nothing like home cooked North Indian food , love butter chicken , bhuna gosh , rogan josh , well marinated , and seasoned , kababs and tandoori chicken my favourite being Galouti kebabs .
I am also a Biriyani fan, love the various Biriyai preparations from all over the Kacchi Gosht ki Dum Biriyani being my favourite.The Tava Khana and chaap is another favourite. North Indian Chaat , Bhelpuri , Golgappas , Jalebis Rabdi, Jhalmuri, Vada paus and all street comfort foods from all over . When I’m travelling abroad I prefer to try the local specialities. Love trying out various Pizzarias .

2. Your favourite dish at home?

At home I love our Parsi Dhanshak and Kebabs . I always  look forward to our Sunday lunch cause it’s made every Sunday.

3. Which cities in India and/ or abroad would you rate as best for foodies?

Mumbai cause we could try out a variety of local and international cuisines.
I enjoyed the food in Italy and Greece the most.

4. If you had a choice of starting a restaurant in any city which would these cities be?
Bombay, Italy , Paris and London

5. Your most memorable meal or meals?

In Italy , in a small husband and wife run restaurant. With 4 tables only. The warmth , the pizzas , pastas and calzone fresh out of the wood fired oven before us with their house wine. Truely divine !!!

 


6 ) How would you celebrate a Romantic meal with spouse or girl friend?

I have celebrated it on a tiny inhabited island in Seyshells on a full moon night. It was table for 2 on the beach. Candle lights only. A musician strumming on his guitar. The chef was on the barbecue grilling the fresh catch of the day. The best grilled Jumbo prawns and Lobster Thermidor I’ve ever tasted with Chablis to complement. And the gentle sound of the waves to complement the evening.

7 ) If you were told you could plan your last meal what would it be like, what kind of setting and whom would you invite?
If I was told I were to plan my last meal , it would be a destination dinner probably in Greece , Santorini , with my immediate family and close friends and I would try and have everyone’s favourite drink and Greek food and party all night long !!!!!!

Rushad Ginwala is a hospitality professional qualified from the prestigious IHM Mumbai. He worked in hotels and restaurants before launching Mirch Masala in 1992 and Tomatos in 1994-5. His company Ahura Restaurants P Ltd runs multiple restaurants under brands like Dhoom Dhaam, Tomatos and Mirch Masala. They also undertake on- site catering and banqueting, and manage restaurants and food service at prestigious clubs. He was awarded Restaurateur of the Year by Times Food Awards.
