Elizabeth Smetacek has started a vegan venture called  Lisa’s Bäckerei offering items like vegan coconut brandy Berliners, chocolate cake , frosted cake, scones and fudge.
IFEA: What inspired you to open the vegan enterprise?
ES:  I have always enjoyed baking, and have been doing it since I was 9 years old, and when I became a vegan 8 years ago, I started experimenting and creating vegan recipes. I started my cloud bakery, Lisa’s Bäckerei, so that people could have access to a variety of vegan products.
IFEA: How did you prepare yourself for the patisserie career?
ES: Since I started baking I have been experimenting on my own and learning from the internet, which is a wonderful source for learning.  I joined an Advanced Diploma course in bakery and patisserie at IICA New Delhi, which I finished this year.
I developed the menu and recipes through a lot of experimenting and getting feedback from guests at my family’s homestay, The Retreat at Bhimtal.
Promoting my kitchen had it’s challenges as it is a home bakery- to get exposure I have to create a lot of content.
IFEA: Do you think the demand for vegan food is on the rise?
ES:  I do think that veganism and plant based diets are becoming more popular now, with social media it has become more and more easy to access information about plant based diets and with access to plant based recipes and food guides, people can make the transition to a plant based diet more easily.
 I think the largest sector for vegan pastry are customers who have chosen veganism for environmental and ethical reasons, and would like to enjoy sweet treats that are ethically made.
IFEA: What are your top items?
ES: I think my signature vegan desserts are chocolate cake , coconut and brady Berliners , fudgy Brownies and English scones
IFEA:  What are your plans for the near future?
ES: I plan to eventually open a custom designer cakery and a line of affordable, vegan food as a healthy and vegan alternative to the standard fast food .
