These recipes give instructions on how to prepare one-pot Indian meals like sabzi pulao or khichadi using elements or ingredients associated with other cuisines.
DESI VIDESHI KHICHADI
Ingredients
Rice 1 cup
Moong chilka dal 1/4 cup
Veggies: tomato, onion, beans, cabbage, peas, capsicum, corn kernels, green chillies, any others cut into pieces, chunks or slices.
Peanuts – fistful
Haldi (turmeric), salt, red chilli powder, garam masala, Mexican style condiments, chilli flakes, oragano, tomato ketchup, mustard seeds, cumin and pizza sauces, according to taste
Oil
Water 2.5 cups
Whole spices like star annise tejpatta, black pepper, cardamom
Coriander leaves
Method
Wash dal and rice, soak both for 1 hr then strain.
Heat oil in a pressure cooker,
Add all ingredients except dal and rice to the oil.
Add dal and rice to the resultant mixture,
Cook till 3 whistles of the pressure cooker (if not using pressure cooker with whistle, cook till the desired consistency is attained.
Garnish with coriander leaves.
Serve – hot with a salad and curds on the side.
